Let The Zesting Begin!

Adding a little citrus to a dish can really brighten it up, but for different reasons, juice is not always the best choice. Which leaves the zest.

Zest is the darkly colored outer layer of the citrus. Right underneath the zest is white skin, called the pith. This is bitter and you don’t want it in your dish! Which means you need to zest properly, which means you need the right tool. A microplane does the job perfectly. Plus you can use a microplane to grate garlic, nutmeg and ginger. You can even use it to grate a small piece of cheese.

So if you don’t have one, go get one. And let the zesting begin!
