PASTA WORKSHOP - SUNDAY, APRIL 11, 1PM TO 4PM Nothing tastes as delicious as fresh pasta does! This workshop will teach you how to make four different easy pasta dishes from scratch! In this class we'll roll up our sleeves (literally), combine eggs and flour to make a silky dough, and then cut Tagliatelle, the long, flat ribbons of pasta that are a classic dish of Emilia Romagna. To go with the Tagliatelle, we will make a "quickie" version of classic Bolognese ragu. Then I will teach you how to make two types of Gnocchi, and I guarantee you'll argue over which one is lighter! We will dress the Gnocchi with a light sauce of Cream, Peas and Prosciutto, and then stuff Ravioli with Spinach and fresh Ricotta, finished in a simple sauce of Browned Butter. And before the flour is put away we'll make sweet, crunchy Almond Biscotti.
MORE SAN MARINO SPECIALTIES - SUNDAY, MAY 2, 1 - 4PM As you can see from the pictures below, our first San Marino Specialties class was a huge hit. For this class, we will tackle the famous flat bread of not only San Marino, but the region of Emilia as well - PIADINA! While we discuss which cheese we like better with our Piadina (there will be several to sample), we will make a succulent Porchetta - a roast pork seasoned with fennel and spices, rolled up and roasted to juicy perfection! For dessert we will make Zabaglione - a perfect complement to any Sammarinese meal!
All classes last three hours and are held in my own professionally equipped "hands on" kitchen in Douglaston. Classes include a complimentary glass of wine as you sample the dishes you've created, and written recipes for you to take home. Space is limited so be sure to reserve a spot for yourself anda friend!
Our last class was "San Marino Specialties", and we put together a beautiful Lasagna Verde (Green Lasagna - the pasta is made with spinach), a fluffy Focaccia and an Apricot Jam Crostata. As you can see from the pictures, everyone had a great time!

"Thank you so much for everything. Everyone thought the lesson was fantastic, especially the bride-to-be who called yesterday to tell me how much she loved it. She was so impressed that you brought everything, and that even simple things you taught, like how to cut properly, were so helpful. Thank you again." - Rachel G.
